While visiting Denver, I had a friend that wanted to share an exceptional meal. I began pouring over menus, looking at reservations, and reading reviews. After all of that, I found The Bindery. I saw they were offering a Wednesday special of a salad, two pasta dishes, and a bottle of wine for $58. Although that certainly would have been plenty of food, we opted for a celebratory cocktail, and a couple more dishes because they sounded too incredible to pass up. The Manhattan is such a simple cocktail, but I greatly appreciate when restaurants use quality ingredients and can do it justice. My mom greatly enjoyed her, “let’s be cereal“ espresso, martini with cinnamon toast crunch inspiration. The dish that we had to order no matter what just to try was the smoked rabbit pecan pie with aged cheddar and mustard gelato. It was more of a pot pie than a traditional pie, but the unique flavors of the savory smoked rabbit and the flaky crust were divine. The green tomato and plum salad was bright and refreshing – especially paired with the wine. You could tell they make this pasta fresh daily by hand, and we thoroughly enjoyed it. However, this 12 oz. grilled Wagyu ribeye was the dish I would want again. The steak was melt in your mouth, the sauce was unique, and I loved that it was paired with a spiced pineapple wedge. That was a refreshing bite after the crispy fried Vidalia onion rings with the perfect texture. I’m a sucker for an open kitchen and this restaurant leaves nothing to the imagination. You could sit at the bar and watch every step of their process. Their staff was extraordinarily attentive and helpful. Luke and Danny, our servers were amazing and the restaurant owner checked in on nearly every table in the restaurant throughout service. The LoHi area in Denver is quickly becoming one of my favorites with so many exceptional restaurants. This is definitely one to add to that list.

My boyfriend and I absolutely LOVE this place. It’s my favorite place to get brunch in all of Denver. There was a period of time where we were coming almost every weekend. Every single item we’ve tried from their menu has been incredible. The atmosphere feels high class and the service is top tier. They really do go above and beyond. We’ve had both Andre and Cristopher multiple times and they are both amazing and make us feel special and welcome each time. Try the Duck Hash and the French Toast- best French toast in my freaking life. Thanks Bindery we will be back over and over and over again
We’ve gone here multiple times and the food never disappoints. Everything we’ve tried has been delicious, and the cocktails pair perfectly with the meals. The atmosphere is such a good vibe and the staff is always friendly and welcoming. Definitely one of those places you keep wanting to come back to!!
The service was impeccable!! The staff was so attentive and their presentation was excellent. The food at Brunch was soooo good as well. My husband got their quesadilla special and I chose La Emmabella which is a hen in a basket style breakfast. I can’t wait to go back!! 10/10
Our family went to Mother’s Day brunch & had not only excellent service, but a delicious brunch. We each had a different dish & all were amazing. The host & waitress were very pleasant & eager to serve our part of 5. We will definitely be back.
